Optimized Ground Turkey Breakfast Hash

Serves: 2

Ingredients

  • 1 lb (450 g) ground turkey (93% lean)
  • 2 cups (about 300 g) sweet potato, diced small
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups (60 g) fresh spinach
  • 4 whole eggs
  • 2 egg whites
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1/2 avocado, sliced (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potato, cover, and cook 8–10 minutes, stirring occasionally, until fork-tender.
  2. Push sweet potato to one side, add onion and garlic to the skillet, and sauté 3–4 minutes until softened and fragrant.
  3. Add ground turkey to the skillet, breaking it up with a spatula. Season with paprika, cumin, salt, and pepper. Cook 6–8 minutes until browned and cooked through.
  4. Stir in spinach and cook 1–2 minutes until just wilted. Mix everything together in the skillet.
  5. In a separate nonstick pan, scramble the whole eggs and egg whites together over medium-low heat until just set.
  6. Divide hash between two plates, top each with scrambled eggs and avocado slices.

Why these changes

  • Egg whites added alongside whole eggs: boosts total protein and leucine content per serving without excess dietary cholesterol/fat from more whole eggs.
  • 93% lean turkey instead of 99% lean: keeps a modest amount of fat for palatability and calorie density, which matters if this meal needs to support a surplus for muscle gain.
  • Avocado added: contributes unsaturated fat and helps raise total calories in a nutrient-dense way, useful if you're eating in a surplus.
  • Cumin/paprika: no metabolic effect on hypertrophy, just makes a higher-protein, higher-fiber meal easier to eat consistently.
  • Sweet potato kept as the carb base: good fiber and micronutrient profile, and the fiber plus protein/fat combination will slow gastric emptying, giving steadier amino acid delivery into your next few hours of digestion — reasonable for a meal eaten mid-morning ahead of training or a long gap before lunch.

Adaptations

  • Higher protein, lower fat: swap to 99% lean ground turkey breast and use only egg whites (skip yolks).
  • More carbs: increase sweet potato to 3 cups, or add cooked oats on the side.
  • Vegetable swap: kale or Swiss chard instead of spinach.
  • Extra fiber/volume: add diced bell pepper or zucchini with the onion.
